Executive-Chef-Saga-Horner2-e1387301530835-225x300If you order the bison burger or veggie burger at Zel’s Del Mar, you can be assured it will be served on a freshly made bun. Executive Chef Saga Horner makes the brioche buns, as well as tableside ciabatta bread, from scratch every day.

“I want this place to be great,” Horner said. “That’s why I’m here.”

The Del Mar restaurant opened four years ago, but Horner overhauled the entire menu when he was hired about 18 months ago.

From burgers and flatbread pizza, to salads and sandwiches, the San Diego native describes the menu as “American cuisine with world influence.”

At the beginning of each season, the restaurant offers a tasting menu so guests can try [...]

Chef Pascal Vignau feels at home at Chandler’s Restaurant & Lounge

randc-chef_Zel_1253The chef helming Chandler’s, the Hilton Carlsbad Oceanfront Resort’s all-day eatery, is a household name in coastal North County. Before taking up his new post, executive chef Pascal Vignau made a name for himself at longtime Encinitas favorite Savory Casual Fare. While the business that went into Savory’s space — Craftsman American Tavern — is constantly crowded, many locals missed Vignau’s food, and are excited about his return to the scene.

Nowadays, most chefs eliciting this style of cult fandom are of the new wave variety. But you won’t find any fancy foams, gels, powders or “air” on Vignau’s menu. He’s moved on, but his cooking style remains as it’s [...]

As seen in Del Mar Times, Zel’s Del Mar ready for third anniversary celebration

By Kathy Day

DELMARTIMES-GREG-JENJenn Powers and Greg Glassman thought about throwing a party after their restaurant, Zel’s Del Mar, had been open for a year. And they thought about it after the second year but, again, it didn’t happen.

Now, at the end of their third year at the corner of Camino Del Mar and 13th Street, they are gearing up for a celebration on Aug. 19, the couple said.

Their venture into the restaurant business has been an interesting one, said Greg, who noted they opened in the heart of the downturn and without a liquor license. Eventually they got that in a license lottery.

“As any restaurant does, we had to spend time figuring out who we were and defining ourselves,” [...]

DELMARTIMES-ZELGrandson of Zelig Camiel opens bistro

There’s an interesting story – and a lot of history – behind the namesake of a new eatery in Del Mar. Greg Glassman opened the bistro-style restaurant about a month ago to commemorate his grandfather’s longstanding history as a Del Mar resident and merchant. Glassman wants Zel’s Delmar to be a village gathering place reflective of Zelig Camiel’s commitment to community, neighbors and friends.

“I wanted Del Mar to have a place that is uniquely theirs,” said Glassman, who owns and operates the restaurant with his fiance Jenn Powers. “We felt like we could bring North County a slice of something a little different.”

Located on historic Highway 101 in the heart of the village, Zel’s Del Mar offers a little bit of something [...]
